Cherries are hand-picked at peak ripeness. Only the skin is removed leaving all muscilage intact. Yellow (25%) and Red honey (50%) processed are left with less muscilage.
Coffee is spread out in thin layers in a green house to dry for up to 10 days and regularely raked to prevent moulding and too quick fermentation. Black Honey is high risk, high reward. A lot of sweetness and complexity in the cup.
